- Leftover dinner from last night
So you may consider this cheating, but I regularly make twice the amount for dinner and have it as leftovers the next day, hot or cold, I’m not fussy.
I will generally make this the night before too and its so quick and easy to grab and heat up at work. My favourite is a butternut squash soup, like this one below.
- Pitta breads with falafel
The falafel can be made quickly in the morning or the night before, then just stuff a pitta bread with anything that takes your fancy. For me it would be hoummous, lettuce, red cabbage, sweetcorn (Is this weird? – perhaps!), red peppers and watercress.
